the previous OOO-users mailing list had a prefix of [users]. I don't
understand why there is so much drama about reverting back to the same
functionality this mailing list had in its previous incarnation?

It's akin to discussing which end of the egg you open. It really doesn't actually matter that much, and there are arguments both ways (although I happen to favour the "don't do it" side, as it's clearly better :-) :-) ).

I have found it convenient to make Thunderbird email rules to use [users] etc prefixes. On the other hand, the address from whence the messages come appears to be consistent ([email protected]) so a single rule for OOO-users is possible. If this is continues, I do not care about a prefix.
