Install whatever version of openoffice is packaged for your distribution. Most modern distros should have some release of 3.x. You'll need a script to invoke OOo in headless mode, using the commandline flags in the first section of the wiki page Mahmut indicated. To test if your script works, run "netstat -nl" in a terminal window and look for a line that looks like this:
tcp        0      0 127.0.0.1:8100          0.0.0.0:*               LISTEN

If you want the service to start automatically when the server boots, you'll need to create an init script to do it. See your distro documentation on how to do this.
