Well that was part of my question. So do I need to be in grid mode to run instances, or can it be done as a standalone as well?

        For me the solution was to split the simulators across
        multiple opensim processes (I'm running in grid mode) and
        eventually upgrading to 0.7.3 which supports 64 bit OS. I have
