I have noticed this as well. It seems that HUD objects have issues when
being edited (other than simply positioning the entire object) while
attached to a HUD spot and the linked prims will be flung some where far
off world. A work around is to rez the HUD on the ground, do the editing
there, and then take it back to inventory and reattach / reposition.
You'll need to rez an unaffected copy of the HUD though.
