You can find the a pkgbuild specfile for vim 7.0 at 
https://svn.sourceforge.net/svnroot/pkgbuild/spec-files-extra/trunk/SFEvim.spec

You will need to install the JDS Common Build Environment to build it. The 
instructions can be found a the JDS project page - 
http://www.opensolaris.org/os/project/jds/contributing/building/
