The same reason why the grub menu on the install disk is in text mode rather 
than graphics mode, namely that it must support all non-EOLed Sun hardware. 
Linux and Windows don't have this problem since none of the companies behind 
the major Linux distros nor Microsoft are hardware companies as well as OS 
vendors.

(There is a particular Sun server - I forget which model - which won't boot 
with grub in graphics mode).
