I think the secret there is to use gconf-editor. I couldn't find anything in the compiz preferences gui that allowed this.

This is strange, I have compiz enabled and have 6 workspaces in b129. Checking some of my settings:

/usr/bin/gconf-editor

/apps/compiz/general/screen0/options

The setting for hsize is the setting for workspaces, mine is set at 6.
