Sure it's possible, there is a basic image, called os-core, just have a look at our github.com/openthinclient repos, There is a huge Makefile which will orchestrate scripts to create a Debian based, thinclient oriented base image (squashfs). The apps you have seen are basically self-contained squashfs images, which will be mounted in the course of the booting procedure and contain payload, metadata and information about how and whent stuff will get started (rcS.d, rc2345.d, tcos/launcher).
