I'm not exactly sure how this would be different with branches. Care to explain?

Well I think Andreas sums it pretty well:

        ... and you and up at exactly the current situation, but you have to 
specify the modules via branch names ;)

With the added "benefit" that one of the main strengths of git - the super 
powerfull and flexible branch & merge has been straight-jacketed by project 
organization.
