Don't most racing yachts have two control stations on either side? This
allows the helmsman a better overall view when the boat is heeled over; he
can switch from one side to the other.

At least that's what I think. I personally have never owned a yacht.
Probably never will.   :>)

You mean the two wheel-like structures with men standing in front of 'em? I
would imagine they aren't wheels but maybe pulleys or other assorted stuff.
I don't know too much about Yatchs, being a 'Dinghy' man... The principles
are more or less the same though.
