Hi Joakim, Are you wanting to do this with any OpenGL program, or just your OSG application?
Either way, I've used GLIntercept in the past (http://glintercept.nutty.org/). It was really easy to use with Windows. You just place an OpenGL dll in the application directory with a config file and it can save all uploaded textures to a file. Hope this is useful.
