There are still cases where it's useful to know what the coordinate system is with an identity matrix set, though. I'd be for describing it explicitly as "the coordinate system with the ModelView matrix set to identity", but avoiding the term "default coordinate system" for the reasons you mentioned.
It's interesting to note that the OpenGL spec makes no mention of a default coordinate system at all (at least none that I could find). It even states that there is no requirement for right- or left-handedness (though it does describe the conditions and settings that result in a right-handed coordinate system).
