Hi Lucie, to cut your terrain you can use a lot of tools...google is your friend, you'll find a lot of info on that topic.
If you have the budget for it, one of the most convenient tool is probably GlobalMapper: http://www.globalmapper.com/ Of course gdal_translate can do it too: http://www.gdal.org/gdal_translate.html I believe 3Dem can do it: http://freegeographytools.com/2007/dem-terrain-depiction-using-3dem and probably QGis: http://www.qgis.org/ Hope it helps.
