Hi Ted, As a general recommendation I would suggesting starting with the simplest/cheapest setup to start with to see if that is viable and then progress on to more complex/expensive solutions if required. The progression in terms of complexity would be single card single machine, dual card single machine, single machine in two or more machines.
To be clear on your requirements, you are want to render in stereo, but to how many stereo displays? And what type of stereo display? What testing have you done so far and what were the results? Robert.
