I just downloaded the Beijing map, so hopefully, I'm seeing what you're seeing. So just as a sanity check, what happens when you zoom into central Beijing? At the higher zoom levels, the map should resolve to streets, walkways and features.
If you're seeing those, keep the map there and search for your hotels using the looking glass icon. Do they now come up? Similarly, you should be able to make offline walking routes by specifying remote starting points.
