Well, the man pages are also on the website. In this case:

Specifically, each of the "files" represent properties of actual DS18S20
chip. This chip has high and low temperature thresholds for setting the
alarm state.
You can read and write (set) these thresholds with owfs in the very
intuitive manner of reading and writing to that "file".
e.g:
