I think your idea will work, but I have a couple of thoughts:

1. Why use a DS2409 to partition. Either leave it on the main line, or use a
separate adapter.

2. You can get better resolution of depth if the sensing fields of each of
the thermometers is large, and you interpolate: In lateral rather than
horizontal format:

---A--- ---B--- ---C--- ---D---

So if A and B are water temp, D air temp, and C in between, you can
interpolate C's temp to get a better estimate of level. Of course, water and
air have far different thermal conductivity, so there may be no benefit.
