Copper tube would be unsatisfactory for this project because they will be used 
in fishtanks. 
The copper can leech killing invertebrates in the tank. I was thinking an RTV 
silicone or some 
type of epoxy. I would assume each covering would change the temperature 
readings and would 
have to be calibrated for.

I built several probes for measuring the temperature of hot water. They are 
made of copper refrigeration tube, closed at one end by sawing a cross in it, 
folding over, and soldering. I wired up a sensor to some telephone cable and 
stuck it into the tube with some heat sink gunk, then closed the whole thing 
with some special heatshrink tubing that has an internal layer that melts to 
make a great seal. Very successful probes but a fairly high thermal mass. The 
copper tube goes into a fitting made out of a compression union cut in half 
with the brass compression ring replaced with an o-ring. Works very well - 
couldn't be better, in fact. 

I made some cold water probes just by putting the same heatshrink right over 
the wire and sensor, leaving the sensor package sticking out a bit. Also very 
successful and much less thermal mass.
