I do this now for my aquarium. Just get some Marine 2 part epoxy, and
slather it all over the sensor and wire. Just remember to label your
wires *BEFORE* you encase it in epoxy to avoid a headache -
unfortunately I speak from experience. I sealed the wires too just to
be safe and to avoid any chance of
polluting my aquarium water with anything that may leech out over time.
You should be able to find the epoxy at your the local Menards/Lowes/Home Depot/etc. It's not pretty, but just seal it up good and you are set. The only real thing it does is slow the heat transfer time a bit, but you shouldn't notice unless you have drastic, short-lived temp changes you are trying to capture.
