Personally I'd rather use Sphinx or similar. The main reason is that
it's reasonably easy to sustain a coherent narrative structure, i.e. one
could convert the whole thing to a single PDF for off-line perusal (or
even (inclusion in) a book).

Also, you can store the API documentation within the code, so there's a
chance it'll actually stay up to date.

I wouldn't even think of trying that with a Wiki-like approach.
