I recall last time I looked at something like this, I found that the default SharePoint rendering for a drop-down with more than 20 items in it is a 'typable-innable' drop-down, and a 'non-typable-innable' drop-down control if it contains less than 20. Or maybe it was the other way around. And maybe it wasn't exactly 20 but close to it J Try inserting over 20 / removing to under 20 items and see if the behaviour changes. In the end we used a custom control to avoid it. I've got a lookup column on a newform.aspx however it allows typing in it, which is messing things up (as you can type anything in it, rather than only what is in the fake drop down list).
