p.s., I've figured out if I simply leave the machine (in my case it's a VM) sit 
for a short time, 15 -20 minutes maybe, after the Packetfence install/reinstall 
the interfaces will disappear on the configurator/networks webpage (a simple 
webpage refresh will show this), yet will reappear with another Packetfence 
reinstall.  I imagine a Linux wizard may have some ideas why, for me, at least 
I can finish the configuration.
