I've edited my profiles.conf and restarted packetfence.

When I went back to my test box to see if it had worked, I noticed that
my network connection was connected from before. Odd, so I rebooted my
PC and de-registered it through the admin interface. After that I now
get the error:

The guest_self_reg and guest_modes are no longer used. You can remove
them, The self-registration is automatically activated when one of the
authentication sources provides self-registration (SMS, email, or
sponsor).

Do you have any error in the packetfence.log file when you hit the
self-registration page?
