Ah yes, I've heard of Remote Speakers. Airfoil is on a slightly larger scale, you can for example "Hijack" any device or software on your computer that gives out audio, you could for example "Hijack" JAWS and send it around the room or your network so therefore you can send Winamp, Windows Media File, a DVD Player, your line-in of your sound card or whatever.
If you're using Airfoil to stream from a media player such as Winamp or VLC you can use a remote control on the receiving device to manipulate tracks, volume etc. Regarding your airPlay problems? All i can say is you're not alone and I do have them from time-to-time. My solution was to use Google and to read the forums to find out what seemed to be causing these problems and there is of course no direct anser to that question but the majority of cases seemed to be solved with a router that provides good wireless coverage and the flexibility of a full setup, such a facility exists in the Asus RTN56U. I won't go into all the pros and cons here so I'll just mention a few things you can do. You can separate the 2.4GHZ and 5.0GHZ thus dedicate those tasks which require more band with to the network with the least interference. Another thing you may like to try is to manually set the wireless channel for your router, I know the router is supposed to change channel in auto mode but I've seen a lot of routers with problems there, the RTN56U seems pretty stable, I might get a 20 second dropout on the odd occasion when the Asus changes channel, with the RTN56U you can also specify the band width of each network.
