You can use OS 9.1 for classic just fine, a bit slower perhaps, but it 
doesn't seem so to me.

I'm not sure about sonnet's software but with XPostFacto (free) you can 
install OS X on the 7300 w/ stock 604 cpu or w/ a G3/G4 upgrade, from any 
manufacturer.  You'll have to use the L2 cache config utility to enable the 
upgrade card's cache.
