I have interleaved my memory for more speed, but I gather some cards don't like this and you specifically have to de interleave. My memory is mainly 60 ns, with some 70 ns. Again, I have heard some cards behave better with all 60 ns memory, but I have no problems. The fastest SCSI is faster than IDE, but also most modern IDE drives are faster than 5 year old SCSI drives fitted to most powermacs. IDE uses the processor more, so isn't ideal for multitasking.
