I had similar problems after upgrading to OS 9.1.   I found 
installing the Open Transport 2.7.6 update (download from Apple) 
resolved my freeze problems with Real Player and Quicktime Player 
also.   Also, make sure you are using the latest version of Real with 
OS 9.1.  Don't know about Sub Menu problems though.   Try tossing the 
Apple Menu Options and if that doesn't work, turn off 'Remember 
Recently Used.'
