Nancy, I have a Performa 6400/180 that has slowly evolved to a G3/400 1MB L2
136MB RAM 10Gig IDE(Quantum Fireball) 2Gig SCSI(in upper bay) 32xCD-ROM
small graphics card OS 8.6 and 9.1 ...
The Quantum drive has worked well, though I have read some negative reports
on Quantums. 
I would agree w/another reply to your HD question, stay w/a brand supported
by Apple's Drive setup.
 Max the Ram for sure.
The next step would be a G3/L2 accelerator card. Sonnet Tech's seem to be
one of, if not the most stable. Many used cards out there for sale. Will
make it seem like a new machine as the 6500 can run up to a G3/500MHZ.
Also try a most excellent site, http://www.zone6400.com/  . Lots of
6400/6500 specific info, a 'take apart manual', forum, etc. For $10 Tom
Koons (site owner) will send you a CD w/all the archived info, the manual,
etc.
