I'm no expert but I think that if you do NOT EVER need to use modern
peripherals (USB or firewire) then the 7100 as it is may be a better deal
now.

However if its easy and cheap to up the ram in the 7200 then go with that
and if you needed you can add PCI cards later to extend its capabilities.

Both can have G3 upgrade cards - maybe the nubus cards are a little cheaper.
I would have thought a G3 chip upgrade desirable/preferable if working with
images though if working at the low end you should be ok.
 You didn�t say what video capabilities each Mac had but you want at least
thousands and preferably millions. And 640 pixels doesn�t give much
workspace so 832x624 or higher is better.
If there isnt a card in the 7100, I would add one as it uses general memory
for display.

I seem to remember reading something somewhere that didn�t rate the 7200s as
a great improvement over the 7100. Was this a mix of features including a
different chip - cant remember and may not be true.

Thought I would offer 2c worth!
