In theory? Sure.

In practice, ehhhhh.... there may be BIOS changes needed. And those may not 
always be available. F'rinstance, I have a Matrox Mystique 440 here (early 
3d card, with a then-whopping 4 Mb VRAM) - no way to get it running on a Mac.

Have to check on a card by card basis.
