Assuming you are using a cross-over cable (which is different from a normal ehternet patch cable) and assuming that it is wired properly, then you probably need to do the reboot shuffle. Connect up the two machines. Boot one of them up. Boot the second one up. The first one's ethernet port will not be active because there was no valid ethernet connection when it came on. Now reboot the first machine while the second is still on. This time there is a valid connection at the other end when it boots up. Now you should be able to choose ethernet in the appletalk CP, unless you have some other problem. There's some point at which more recent Apple machines don't need the reboot shuffle, but I'm not sure which model that starts with, but for older machines, if they're not connected to something working at start up, you need to reboot them while connected to get ethernet active.
