Paul,
What you add into your PCI slots depends on what
else you want to do with your computer that you
can't do in it's present condition.

In my case, I added a video card into one PCI
slot so I can have two monitors on my 7500.
(One for the PCI PowerMac List, one for surfing).

I added an Ethernet 10/100 card in another PCI
slot so I can transfer files quicker to the other
computers on my home network.  They all have
Ethernet 100Mbps capability.  The 7500 had 10Mbps
on the internal built-in ethernet port (too slow).

So the decision is yours...
