Assuming you're using OS 9, I wouldn't put more than 7 128s in, leaving the 8th slot empty or putting a 64, or smaller, in it.
Reason: you cannot enable virtual memory if you've maxed out the physical memory. While it's true that you're very unlikely to *need* more than 1 GB, enabling VM enables MMM (Modern Memory Manager), which makes the whole system (especially the Finder) faster, more efficient and more stable. Another thing to consider, some processor upgrades have problems with interleaved memory. With all matched DIMMs, your memory will all be interleaved. Check your documentation to be sure.
