What are the macs? Are you going into Chooser and mounting the volumes? 
Is appletalk still set to Ethernet?

Older Macs will boot up, and switch Appletalk back to the modem or 
printer port if they don't sense a signal on the ethernet port. Using a 
hub or switch instead of a crossover cable will alleviate this problem.

Just turning on file sharing won't put the volumes on the other Mac's 
desktop you also have to go into chooser and mount 'em (at least the 
first time, and whenever Appletalk can't find the network)
