System 9.1 will be bigger, use more memory, be a tad slower and a lot
more stable than OS8.6, and some of the applications that run just fine
on System 8.6 require updates to be compatible with System 9.1.

OS9.1 enables file-sharing over the internet and a few other things,
like improved Multiple Processor recognition. Nothing you really need.

I have OS 8.1, OS8.6 and OS9.1 on my 6500 as well....but find that the
system I use the most is 8.6.
