I use Textedit all the time on OSX and never have a crash at all...and 
if you're coding by hand use BBEdit Lite, OSX native, fast, stable and 
free, with far better search&replace functions.

What version of OSX are you using? If it's not 10.2, upgrade, period. If 
you are, run Disk Utility and run Repair Disk Permissions on your boot 
volume.
