Matthew, I use TextEdit a lot. Since I cannot scpell I do most of my email and such in OSX's TextEdit. It is always open and I use it to copy and same text information from the web to my HD. It has never, even since before OSX v. 10.1, crashed on me.
There is something wrong with your setup, and it can be fixed. I think you may have a corrupted system font (educated guess). Remove unnecessary fonts from the font folders and then replace the system fonts from "Restore CD". Try that first and if it don't work we can go from there.
