(1) Are there any Apple mice I should be wary of (not interested in non Apple)?

The Apple optical mice work well, but are one-button. If you want to go with more buttons, there are a lot of choices that work great on your usb. I use a Logitech wheel mouse as well as a Kensington TurboBall which are both hooked up at all times...

(2) Do they work fine on PCIs such as mine with similar specs or more
trouble than they are worth - do they slow things down, take up more
processing power or anything?

No. They work great.

(3) Specifically a gent said to me in answer to a question on ebay: "I have
a Mac Pro USB mouse.... which is an optical mouse and the one that
ships with ALL new macs .... its picture will be in any advert for a new
mac! It is arguably the best mouse available anywhere ... the retail price
is $125!!! ...so $50 isn't a great deal to ask!!" These are Australian bucks
so maybe nearly double for US ones. Anyway, is this mouse suitable for my
machines

As before, this mouse works great. But don't get ripped off as they are a dime a dozen because many people want more than one button.

BTW I still use the mice from my old SE, I like the solid blocky sure feel
rather than the cheaper looser rattlier feel of the sexier more rounded ones
that shipped with 7300s. But sure would like an optical (save cleaning and I
have heard is more precise)

Yes, they rock.
