I'd go with the 8.5.1 and then add the free download from Apple to upgrade
to 8.6. (Much more stable than 8.5) If speed seems too slow, you might need
to go back to 8.1, but 8.6 will run many more of the newer programs than
8.1.

Note:
1.  You can run some of the newer programs (those that require carbonlib) by
downloading the "carbonlib" extension from Apple (Version 1.6) and dropping
it in the extensions folder of OS 8.1.
