Pricewise it makes just as much sense to buy a 7/3/5/6/00 Power Mac as the cost of a new logic board from one is about the same as a complete system. They tend to go for under $100.
Even Beige G3 DT are going for under $100. I've seen them as low as $65. Even ebay has buy it now prices of $80. And they are much more economical to upgrade.
