Actually, XPostFacto works very well on 7x00/8x00/9x00 systems. My main (well, my *only*) system is a 9600/G3 that runs Jaguar. It's as stable as any other computer I've owned in the past WRT OS X (original TiBook, 2000iMac DV/SE, 2002Quicksilver). It doesn't cost anything, and if you alread have Panther, then you're well on your way :D
I've heard the only problems with Beige G3 machines is that onboard video isn't supported as of yet, so as of right now, you'd need a PCI video card to run Panther.
