Yeah, you should be able to go directly to Mac OS 8.6...
It has better Internet support, so I'd update to that instead of staying at 7.6.1.

what does that stand for, if you just want to dial up through a modem there is nothing wrong with 7.6.1 - I have a friend that does all her internet on 7.6.1 and it works with netscape 4.7 - Icab etc, quite fast aswell. 8.6 will be slower, with 48 mb ram
