Eudora, hands down. Powerful, flexible and rock stable. I'm running 5.1.1 on my 7500 and have never had a problem with it. Unlike M$ programs, it doesn't store all mail in one database (hard to backup if you archive your e-mail and easy to corrupt). In Eudora each mailbox you create is a separate file.
You can get the full feature set if you accept a small ad on your screen while Eudora is frontmost. (I haven't found it obstrusive.) If you don't want the ads, you can get it for free but with fewer features.
