RAM can be a problem and I would remove any unnecessary PCI cards, hard drives, ect.. when you do the install.
Check the unsupported Mac list archives or the xlr8yourmac site for some good tips from users who have dealt with all the issues.

Hi listers...
I recently obtained a OSX (10.1) install disk. I am totally virginic(!) when
it comes to OSX; how useable is OSX 10.1 compared to the later versions,
Jaguar and Panther...
..speaking of which, what is the "animal" name for 10.1? Tabby? ;-)
Also, I am interested in possibly putting OSX on my 7600. It current has a
500mhz processor from Sonnet & about 384mb RAM in it. It also has two HDs; both
10gb.
What is the recommended upgrade path for my 7600 to run OSX? Instead of
having to partition the current main HD with the classic OS on it, couldn't I just
install OSX on the 2nd HD?
Thanks,
