Well, I think what comes out on the other end of the Apple Video Player is raw data, nothing is compressed. Ask I mentioned before, when I got my 7600, I also got the Avid Video Editing software, which can be used to interface with the AV at the back of the 7600 directly. So, video from source will go directly into the Avid software.
As for turning something from AVP to mpeg, you can always spend the $30? to upgrade your Quicktime to Quicktime Pro. I believe that gives you the capability you need. I think I have experinmented with it. I don't remember anymore. However, one word of caution - video images are huge in term of disk space and sucks up as much of your RAM as possible, so, if you are going to use it for video editing and what not, you want to have a large HD and a lot of RAM. Otherwise, you'll probably crash. Here's another interesting thing about the 7600 - the output part of the AV is covered. However, if you are able to detach the AV unit (2 funny looking screws), you will discover that the unit actually contain a S-VHS output. So, you can actually output the video, but not the audio to whatever you want to output the stuff to. I am sure if sounds comes out of the Mac while you output the movie stream, you can get a cord to interface the headphone jack with whatever you are using to record the output and get your sound back.
