General advice from an OS 8 user, feel free to correct/ignore me:

Since you've got a G3 card, you aren't limited to just OS X 10.1; you 
can go all the way up to the most current version (maybe even a Tiger 
beta).  Discounting Tiger, the latest version is Panther, 10.3.7.  Your 
mileage may vary, especially with it being an unsupported machine and all.

Check your SCSI termination; OS X is very picky about it, moreso than OS 
9.  I think that's one reason why the Mac world switched over to ATA 
devices, that and the rising cost of SCSI.

Same thing with your RAM, you might discover you've got some flaky sticks.

Be prepared for some general annoyances with your old Mac.  For one 
thing, your internal floppy drive won't work (though someone made a 
Darwin mode driver to put it back, it works but isn't perfect, so I 
hear).  I think your serial ports will either be disabled or not working 
correctly.  Check XPostFacto's site when you get there and don't be 
afraid to file a bug report.

Your internal video might have some problems with OS X (and the OS X 
installer).  Max out your video RAM as well or get a PCI video card, 
Aqua is gonna be working your graphics subsystem overtime.  It's worth 
it, though, I use my university's Power Mac G4's when I'm in the lab and 
OS X is like heroin--once you get a taste of its smooth interface, 
you'll be coming back for more. :-P

You might need OS9Helper (http://www.os9forever/os9helper/) to install 
OS 9.2.2 for Classic, though you can probably stick with 9.1 for that.  
It's a free upgrade with definite speed enhancements to the Finder, so 
I'd go for it.  It's a free 100 MB download (2 files) from Apple.

I just bought an OS X 10.0.3 CD and downloaded the 10.0.4 update, so 
I'll be joining you pretty soon (since <= 10.1 supports 603/604 processors).
