I just got two Seagate Cheetah 18LP 9.1GB SCSI on eBay for $44 shipped. The adapters (2) cost $14.25 shipped and I didn't dither, just bought the first one I could find that wasn't overpriced.
Have you installed the Cheetahs yet? I bought one of those and there's no provision for termination, so it can't be the last on the chain. I haven't decided how to try to arrange the stuff in my 8600 yet, but I keep reading about some people needing to take it to a PC to format, and then try to put it into the Mac and the Mac will be able to see it at least. I guess this topic never gets old, as long as folks are determined to get more storage in an older machine.
Naw, I'm waiting for the adapter. TTTT, I didn't notice I was going to need 'em until they got here! :-[
I'll let you know.

New 18 and 36 GB SCSI drives are readily available on eBay at reasonable prices. Seagate Cheetah (and other) models ending in LC will be SCA 80 pin and require an adapter. Drives ending in LW will have 68 pin connections. Both will require external termination if last on the chain, although Peter on this list has said he runs Cheetah drives from controller cards in his system unterminated without issue. Make sure the 80 to 68 and/or 50 pin adapter is LVD capable if you are planning on maximizing the LVD mode speed. These adapters are just now starting to be sold with termination on them if you check around. Once again, if you want to run the drives LVD from a controller, make sure the adapter provides the correct termination for LVD.
If you are just looking to connect these to your onboard 50 pin SCSI bus you should jumper the underside (J2) short jumper block "Force SE" (Single Ended) jumper pins.
One caveat about buying a new SCSI drive from eBay. If it's inexpensive it will probably be a gray market original OEM for some companies servers. It still should work no problem (question your ebay seller, his return policy and his feedback) but if you have issues Seagate will only give you so much tech support help as these OEM drives are considered unsupported.
The drives really shouldn't be a problem. It's buying used SCSI controller cards and getting them to work on various machines with multilpe Mac OSes that caused me problems.
