Well anything is possible, but you will be requiring the printer to do some
additional prepress work, which they will/should charge you for. If it were
simply a change to 100% grayscale, this would be fairly simple. But add in
spot colors around the document and it gets a bit more involved. Would it
not be just as simple for you to create a new originating document, with the
proper color selections and make a press ready PDF?
