Łukasz, Having owned both, I'll give it a try. The MZ-S is a higher pitched sound. In a quiet room it seems to be very noticeable. When used where there is ambient noise, it seems rather quiet. The PZ-1p has a lower, heftier sound. You will always hear it no matter the quiet or noise level. Also, I suspect the duration of the PZ-1p noise is shorter (single shot) as it has a faster transport. You really have to figure the transport sound into the equation as you can't really turn it off for either camera.
My feeling is that if you are really trying to be quiet, neither one will be. You need a manual wind camera with a quiet shutter. If you like a fast shooting style with lots of automation, you might like the PZ-1p interface. If you are more deliberate, or like Aperture priority more then the MZ-S might be nicer. They are very different cameras in style. If possible, you should really try both before deciding. As for me, I had two PZ-1p's and sold them for MZ-S's. I prefer the ergonimics and handling of the MZ-S better (including the BG-10 grip) and like many of the other features (especially the updated flash capabilities).
