If you need a really quiet film camera the little Konica Hexar is har to beat. 
I would rank my cameras from most audible in this sequence, P645, MZ-S, LX, M6 
(rangefinder, FP shutter), M7II (leaf shutter) and E-10 (which is near silent). 
The Hexar would fir between the M6 and M7II.
